Time to- See!
[image: lambsquarters]
Lambsquarters
Chenopodium album
Permaculture Design reminds us to see everything as a potential resource.
With that in mind, look at Lambsquarters, a wild cousin of quinoa disparaged
as a weed. One serving of steamed greens provides an enormous amount of
vitamins and minerals-
<http://rs6.net/tn.jsp?et=1102167923801&s=1&e=001DSuEioKP_NHYzK4cP_dPTmo1G65EzBHQqc7MzsgDrGAE2pzEv5O7Mb2bxmlvmz8Byj4nOpDLBLaPKuAECbLr66DMMswqrU9xayTqcwhGvRrq76Yx10BeIqSkXebrRfITn-lxwMFS8vLtb7i2yh31fJmG5OoGvFo7VO25CDd0jAejNxrkk-92mM8ebWYS131->like
a so-called superfood...
And, it's a fast-growing, self-seeding, drought-tolerant plant. Who wouldn't
want all their vegetables to act this way?
Use in recipes wherever you would use cooked greens and you'll find it's
delicious. Kathryn's favorite is using Lambsquarters instead of Spinach in
Spanakopita (Greek Spinach Pie). Email <news at earthflow.com> us if you'd like
the recipe...

Santa Cruz: Thanks to the Trout Gulch crew for hosting our 2cnd annual PDC.
In addition to being a talented group of artists and animators, they're also
working together at their site to test and implement a variety of natural
building materials and techniques.
As the course wrapped up, students decided to continue their work together
by starting a micro-loan program. Opportunities to learn about animals and
permaculture in the broad landscape continue at the property of one of the
class members as well.
Los Angeles:
Beyond the Garden... We've seen a dramatic increase in the design team
projects moving from the theoretical to the actual: teams worked on greening
the Ritz Carlton in Marina del Rey, designed ways for schools and their
local communities to collaborate on improving their local environment,
consulted with a neighborhood burger joint on greening its operations and
developed a business plan for a salvage boutique and designers guild for
local economic opportunities. Eric Knutzen of HomeGrown

"I don't think it's about a carbon footprint. I think it's about our
handprint, what we do with that carbon that we're using. What do you build?
What do you teach? What do you do, you know? It's about getting out there
and doing something."
